Old Fashion Chicken Soup

Ingredients

2 tablespoons Olive Oil

1 tablespoon real butter

½ bell pepper, finely chopped

1 carrot, diced

1 stalk celery, diced

1 small onion, minced

½ cup green beans

½ cup potatoes, diced

½ cup peas

½ cup corn

1 cup saved chicken broth

1 cup milk

4 chicken breasts (cooked), cubed

½ cup Flour

2 slices white bread, cut into cubes

salt pepper to taste

herbs (finely chopped, such as scallions, dill, ginger, rosemary, thyme, or a combination)

water to cover

parmesan cheese (shredded)

parsley, finely chopped

Directions

Put olive oil and butter in a large soup pot, and simmer over medium heat. Add the onion, bell pepper, carrots, celery, beans, peas, corn, and potatoes. Salt and pepper to taste. Stir frequently while cooking, about 10-15 minutes or until the vegetables are very soft.

Add the garlic and cook for about 1 minute. Next, add the milk and broth, then bring to a boil. about

6 minutes, then add the chicken, flour, and bread cubes. Cover with water. Cook for about 8-10 minutes, and remove from heat.

Season to taste with the herbs, then stir in the parsley.

It can be served topped with Parmesan cheese or plain.
